  • 1 cup full-fat cottage cheese (excess liquid drained) Drain excess liquid for better texture.
  • 2 whole eggs
  • 1/2 tsp garlic powder
  • 1/2 tsp Italian seasoning
  • 1/2 tsp black pepper
  • Pinch salt

Method
 

Preparation
  1. Preheat your oven to 350 degrees F.
  2. In a blender, combine the cottage cheese, eggs, garlic powder, Italian seasoning, and a good pinch of salt and pepper. Blend until well combined.
  3. Spray a parchment-lined baking sheet with non-stick cooking spray.
  4. Pour the cottage cheese mixture onto the baking sheet, spreading it out evenly to about 1/2 inch thick.
Baking
  1. Bake in the oven for 35 to 40 minutes, or until the flatbread has turned golden brown.
  2. Let cool for 10 minutes to let it firm up.
  3. Top with your favorite toppings before serving.

Notes

For longer storage, consider freezing individual pieces well-wrapped to prevent freezer burn. This flatbread is already gluten-free.
