Preparation
- Preheat your oven to 350 degrees F.
- In a blender, combine the cottage cheese, eggs, garlic powder, Italian seasoning, and a good pinch of salt and pepper. Blend until well combined.
- Spray a parchment-lined baking sheet with non-stick cooking spray.
- Pour the cottage cheese mixture onto the baking sheet, spreading it out evenly to about 1/2 inch thick.
Baking
- Bake in the oven for 35 to 40 minutes, or until the flatbread has turned golden brown.
- Let cool for 10 minutes to let it firm up.
- Top with your favorite toppings before serving.
Notes
For longer storage, consider freezing individual pieces well-wrapped to prevent freezer burn. This flatbread is already gluten-free.
