  • 1/4 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 3/4 cup 2% or full-fat cottage cheese
  • 1/2 cup shredded or shaved Parmesan cheese
  • 3 cups roughly chopped fresh spinach
  • 1/2 cup finely diced yellow onion or green onions
  • up to 1 cup cooked veggies or cooked breakfast meats (e.g., bacon, sausage, mushrooms, bell peppers) Optional
Preparation
  • 1 spray nonstick cooking spray for greasing the dish

Preparation
  1. Preheat the oven to 375 degrees Fahrenheit. Mist a 9x9 inch dish with nonstick cooking spray.
  2. In a medium bowl, combine the eggs, garlic powder, salt, and pepper. Whisk until they are well mixed.
  3. Stir in the cottage cheese, Parmesan cheese, spinach, and onion.
  4. Pour the egg mixture into the prepared dish.
Baking
  1. Bake for 30-35 minutes or until the center is set.

Notes

Cottage Cheese Egg Bake can be served warm and pairs well with toast, fresh fruit, or a side salad. You can add hot sauce or salsa for an extra kick. Store leftovers covered in the refrigerator for up to 3 days.
