  • 1 cup plain full fat cottage cheese
  • 1.25 to 1.5 lb shredded chicken Use leftover or rotisserie chicken for convenience.
  • 1/2 cup diced red onion
  • 1/2 cup chopped celery
  • 2 Tablespoons avocado oil mayo You can experiment with different types of mayonnaise.
  • 1.5 Tablespoons lemon juice
  • 1 Tablespoon Dijon mustard
  • 1 Tablespoon fresh dill or 1 teaspoon dried dill Adjust according to taste.
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon pepper
  • 1/4 teaspoon fine sea salt

Method
 

Preparation
  1. Add cottage cheese to a high-powered blender and blend until smooth and creamy.
  2. In a large bowl, combine the chicken, blended cottage cheese, mayo, red onion, celery, lemon juice, Dijon mustard, dill, garlic powder, pepper, and salt.
  3. Stir everything together until well mixed.
  4. Taste the salad and adjust seasoning with salt and pepper if needed.
  5. You can enjoy the salad right away or chill it before serving.
Serving
  1. Serve with crackers, on bread or a wrap for a sandwich, or over a bed of greens.
Storage
  1. Store any leftovers in an airtight container in the refrigerator for up to 4 days, stirring before serving as it may release some liquid.

Notes

For a twist, add fruits like grapes or apples for sweetness, or additional veggies like bell peppers or cucumbers for more color and nutrition. Substitute cottage cheese with Greek yogurt for a creamier option.
