Preparation
- Preheat your oven to 300°F (150°C). Line a baking sheet with parchment paper.
- In a bowl, blend the cottage cheese until smooth and creamy.
- Gently separate the egg whites from the yolks, placing the whites in one bowl and the yolks in another.
- Add the egg yolks to the smooth cottage cheese and mix until well combined.
- In the bowl with egg whites, add cream of tartar and beat until stiff peaks form.
- Gently fold the whipped egg whites into the cottage cheese mixture.
- Sprinkle in the salt and gently fold in the blueberries.
- Spoon the fluffy batter onto the prepared baking sheet in desired shapes.
- Bake for 25-30 minutes or until golden brown and set.
- Allow to cool slightly before serving.
Notes
Tips: Don't over-mix the batter, use ripe blueberries, and ensure no yolk contaminates the whites. Variations: use different berries, add spices or nuts.
