Ingredients

Main Ingredients
  • 1 cup cottage cheese
  • 1/2 cup grated Parmesan cheese For richer flavor, use freshly grated.
  • 1/4 cup milk (or milk alternative) Almond or oat milk can be used.
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Optional: nutmeg for flavor

Method

Preparation
  1. In a blender or food processor, combine the cottage cheese, grated Parmesan cheese, milk, minced garlic, olive oil, salt, and pepper. Blend until the mixture is smooth and creamy, about 1-2 minutes.
  2. Taste the sauce and adjust seasoning to your liking. For an extra layer of flavor, add a pinch of nutmeg if desired.
Cooking
  1. Transfer the blended sauce to a saucepan and heat over medium heat. Stir gently until warmed through, about 5-7 minutes, ensuring it doesn’t boil.
  2. Serve immediately over your favorite pasta, chicken, or incorporate into a pasta bake.

Notes

For the best experience, serve the sauce hot. Store any leftovers in an airtight container in the refrigerator for up to 3-4 days, or freeze for up to three months.
