Method
Cooking the Pasta
- Cook pasta according to package instructions in plenty of salted water, usually 8-10 minutes for al dente texture.
Blending the Sauce
- While pasta is cooking, blend cottage cheese, grated Parmesan, minced garlic, olive oil, salt, pepper, and nutmeg until smooth and creamy.
Heating the Sauce
- Transfer the blended sauce to a saucepan and heat over medium heat, stirring occasionally for 5-7 minutes until it bubbles and is fragrant.
Combining Pasta and Sauce
- Drain the pasta and combine it with the sauce in the saucepan, tossing gently for 1-2 minutes until fully coated.
Serving
- Serve warm on individual plates or a large serving bowl, optionally garnished with additional Parmesan and fresh herbs.
