Ingredients
  

For the sauce
  • 1 cup cottage cheese Small curd cottage cheese recommended for creaminess.
  • 1/4 cup grated Parmesan cheese Can substitute with nutritional yeast for a dairy-free option.
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon nutmeg Optional
For the pasta
  • 1 package Pasta of choice Spaghetti, fettuccine, or your favorite shape.

Method
 

Cooking the Pasta
  1. Cook pasta according to package instructions in plenty of salted water, usually 8-10 minutes for al dente texture.
Blending the Sauce
  1. While pasta is cooking, blend cottage cheese, grated Parmesan, minced garlic, olive oil, salt, pepper, and nutmeg until smooth and creamy.
Heating the Sauce
  1. Transfer the blended sauce to a saucepan and heat over medium heat, stirring occasionally for 5-7 minutes until it bubbles and is fragrant.
Combining Pasta and Sauce
  1. Drain the pasta and combine it with the sauce in the saucepan, tossing gently for 1-2 minutes until fully coated.
Serving
  1. Serve warm on individual plates or a large serving bowl, optionally garnished with additional Parmesan and fresh herbs.

Notes

For best results, serve immediately and consider pairing with a salad or garlic bread. Store leftovers in an airtight container for up to 3-4 days.
