Salad Ingredients
  • 16 oz corn Canned or fresh corn can be used.
  • 16 oz red bell peppers Diced.
  • 1/2 unit purple onion Diced.
  • 1 lb cheddar cheese Grated.
  • 9 oz chili Fritos Broken into smaller pieces.
  • 1/2 cup mayonnaise Adjust based on creaminess preference.

Method
 

Preparation
  1. Prepare all ingredients for the salad.
  2. Dice the bell peppers and onion into small pieces.
  3. Grate the cheese using the larger side of the grater.
  4. Break the Fritos into smaller pieces, keeping them the size you like best.
  5. If you plan to serve the salad later, keep the ingredients separate and do not mix them yet.
  6. Add the mayonnaise right before you serve the salad.
  7. Toss everything together and serve right away.

Notes

Best served chilled or at room temperature. Store leftovers in an airtight container, keeping Fritos separate until serving to maintain their crunch.
