For the Chicken
  • 4 pieces boneless (skinless) chicken breasts (about 6 oz each)
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ½ teaspoon black pepper
For the Parmesan Crust
  • ½ cup grated Parmesan cheese
  • ½ cup shredded provolone cheese (or mozzarella)
  • ¼ cup panko breadcrumbs
  • 3 tablespoons mayonnaise
  • 1 tablespoon sour cream
  • 1 tablespoon fresh parsley (chopped, optional for garnish)

Method
 

Preparation
  1. Begin by pounding the chicken breasts slightly to ensure they cook evenly.
  2. Rub both sides of the chicken with olive oil, garlic powder, paprika, Italian seasoning, salt, and black pepper.
Cooking
  1. Heat a skillet or grill pan over medium-high heat. Sear the chicken for 4–5 minutes on each side, until it's golden and cooked through (internal temperature should reach 165°F/74°C).
  2. Transfer the cooked chicken to a baking dish.
Making the Parmesan Topping
  1. In a bowl, combine mayonnaise, sour cream, grated Parmesan cheese, provolone cheese, and panko breadcrumbs. Stir until the mixture is thick and spreadable.
Finishing in the Oven
  1. Preheat your oven broiler.
  2. Spread the cheesy mixture evenly over each piece of chicken.
  3. Place the dish under the broiler for 2–3 minutes or until the top is bubbly and lightly golden.
Serving
  1. Garnish with fresh parsley if desired.
  2. Serve the dish hot with mashed potatoes, rice, or roasted veggies.

Notes

Pound the chicken evenly for consistent cooking. Don’t skip the broiling step for a crispy topping. Adjust spices to your taste.
