Ingredients
  

For the cookies
  • 1 box pink velvet cake mix Use any brand
  • 2 large eggs
  • 1/3 cup vegetable oil
  • 1 tsp vanilla extract
For the frosting
  • 1/2 cup cream cheese, softened Let it sit at room temperature
  • 2 cups powdered sugar
  • 1-2 tbsp milk Add for desired frosting consistency

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, mix together the pink velvet cake mix, eggs, vegetable oil, and vanilla extract until combined.
  3. Scoop the dough onto a baking sheet lined with parchment paper, leaving space between each cookie.
Baking
  1. Bake for 10-12 minutes or until the edges are set.
  2. Let the cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Frosting
  1. For the frosting, beat the softened cream cheese until smooth.
  2. Gradually add the powdered sugar and mix until combined.
  3. If needed, add milk to reach the desired consistency.
  4. Frost the cooled cookies with the cream cheese frosting and enjoy!

Notes

These cookies are best served fresh but can also be enjoyed at room temperature or slightly chilled. To store, let them cool completely and place in an airtight container for 3-5 days at room temperature, or refrigerate for longer storage.
