Method
Preparing the Dough
- In a large mixing bowl, pour in the cake mix, add the Cool Whip and eggs. If using flavorings or mix-ins, add them now.
- Mix thoroughly using a spatula or wooden spoon until all ingredients are well combined. The dough will be sticky.
Shaping and Rolling
- Lightly dust your hands with powdered sugar to manage the stickiness.
- Scoop small portions of the dough, about 1 inch in diameter, and roll them into balls.
- Roll each dough ball in powdered sugar until fully coated.
Baking Process
- Preheat the oven to 350°F (175°C).
- Place the coated dough balls on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake in the preheated oven for 10-12 minutes until slightly cracked and set but soft.
Cooling and Storing
- Let the cookies cool on the baking sheet for about 2 minutes before transferring them to a wire rack to cool completely.
- Store cooled cookies in an airtight container at room temperature for up to a week, or freeze for up to three months.
Notes
To manage sticky dough, consider chilling it for 20-30 minutes before rolling. Use a cookie scoop for uniform sizes to ensure even baking.
