Preparation
- Preheat the oven to 350°F (175°C). Grease two 8x4-inch loaf pans.
- In a small bowl, mash the bananas, brown sugar, vanilla extract, and ground cinnamon together.
- In a large bowl, cream the softened butter and sugar together until the mixture is light and fluffy.
- Add in the eggs and beat until well mixed.
- To the wet ingredients, sift in the flour, baking soda, and salt. Stir until just combined.
- Add the sour cream and stir to mix everything together.
- Pour in the mashed banana mixture and mix until just combined.
Crumb Topping
- For the crumb topping, mix 1 cup of flour, 1 cup of brown sugar, and 6 Tbsp of cold butter together until crumbly. Sprinkle this topping over the batter in the prepared pans.
Baking
- Bake in the preheated oven for about 60 minutes, or until a toothpick inserted in the center comes out clean.
Notes
Serve warm or at room temperature. Enjoy plain or spread with butter.
