Ingredients
  

Wet Ingredients
  • 3-4 medium or large bananas Very ripe for best flavor.
  • 2 Tbsp brown sugar
  • 1.5 tsp vanilla extract
  • 3/4 tsp ground cinnamon
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 Tbsp sour cream (or Greek yogurt)
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/4 tsp salt
Crumb Topping
  • 1 cup flour
  • 1 cup brown sugar
  • 6 Tbsp butter, cold

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C). Grease two 8x4-inch loaf pans.
  2. In a small bowl, mash the bananas, brown sugar, vanilla extract, and ground cinnamon together.
  3. In a large bowl, cream the softened butter and sugar together until the mixture is light and fluffy.
  4. Add in the eggs and beat until well mixed.
  5. To the wet ingredients, sift in the flour, baking soda, and salt. Stir until just combined.
  6. Add the sour cream and stir to mix everything together.
  7. Pour in the mashed banana mixture and mix until just combined.
Crumb Topping
  1. For the crumb topping, mix 1 cup of flour, 1 cup of brown sugar, and 6 Tbsp of cold butter together until crumbly. Sprinkle this topping over the batter in the prepared pans.
Baking
  1. Bake in the preheated oven for about 60 minutes, or until a toothpick inserted in the center comes out clean.

Notes

Serve warm or at room temperature. Enjoy plain or spread with butter.
