Method
 

Preparation
  1. Rinse the jasmine rice under cold water until the water runs clear.
  2. Combine the rice, coconut milk, and chicken broth in a pot and bring to a boil.
  3. Lower heat, cover, and simmer for 15 minutes or until the rice is fully cooked.
Cooking Aromatics and Chicken
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until softened and translucent.
  3. Add the diced chicken and grated ginger, cooking until the chicken is golden and fully cooked.
  4. Mix in the sliced red bell pepper and season with salt and pepper.
Serving
  1. Serve the coconut rice topped with the chicken mixture.
  2. Sprinkle fresh cilantro over the top.

Notes
