  • 1 package Pectin Use as directed for jellies.

Method
 

Preparation
  1. Collect fresh clover flowers and rinse them thoroughly.
  2. In a pot, combine the clover flowers with water and bring to a boil.
  3. Simmer for about 20 minutes, then strain to extract the juice.
  4. Measure the clover juice and add equal parts sugar, along with a splash of lemon juice.
  5. Bring the mixture to a rolling boil.
  6. Once boiling, add pectin and stir well.
  7. Continue boiling for another minute, then remove from heat.
  8. Pour the jelly into sterilized jars and seal.
  9. Let cool and store in the refrigerator.

Notes

For a refreshing twist, consider adding herbs like mint or basil during the boiling process. Ensure your jars are sterilized to prolong shelf life. Store in a cool, dark place; refrigerate once opened.
