  • 2 cups clover blossoms Use fresh clover blossoms for the best flavor.
  • 4 cups water
  • 1/4 cup lemon juice
  • 1 package fruit pectin (1.75 oz) Use according to package instructions.
  • 5 cups sugar

Method
 

Preparation
  1. Boil the clover blossoms in water for about 10 minutes.
  2. Strain the liquid to get about 3 cups of clover tea.
Cooking
  1. In a large pot, combine the clover tea and lemon juice.
  2. Stir in the fruit pectin and bring to a boil, stirring constantly.
  3. Add the sugar all at once and bring the mixture back to a rolling boil. Boil for 1-2 minutes, stirring.
  4. Remove from heat and skim off any foam.
  5. Pour the jelly into sterilized jars and seal.
  6. Let it cool and then store in the refrigerator.

Notes

To keep your clover-blossom jelly fresh, store it in the refrigerator. If properly sealed, the jelly can last for several months. Check for signs of spoilage before using. Variations include adding flavors like mint or lemon zest.
