  • 3 pieces ripe bananas, mashed The riper the bananas, the sweeter the bread.
  • 1/3 cup melted butter Consider browning the butter for richer flavor.
  • 3/4 cup sugar Split between batter and swirl.
  • 1 piece egg, beaten Adds moisture and richness.
  • 1 teaspoon vanilla extract Infuses flavor.
  • 1 teaspoon baking soda Make sure it's fresh.
  • Pinch salt
  • 1 1/2 cups all-purpose flour Can substitute with gluten-free flour.
Cinnamon Swirl
  • 1/3 cup sugar For the cinnamon swirl.
  • 1 tablespoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 4x8 inch loaf pan.
  2. In a mixing bowl, mix together the melted butter and mashed bananas until well blended.
  3. Stir in the sugar, beaten egg, and vanilla extract until thoroughly combined.
  4. Sprinkle the baking soda and salt over the mixture and gently fold in the flour until just incorporated.
Cinnamon Swirl Preparation
  1. In a small bowl, combine the sugar and ground cinnamon.
  2. Pour half of the banana bread batter into the prepared loaf pan and sprinkle three-quarters of the cinnamon-sugar mixture over the batter.
  3. Then, pour the remaining batter on top and gently swirl through the layers with a knife.
  4. Sprinkle the remaining cinnamon-sugar mixture over the top.
Baking
  1. Place the loaf pan in the preheated oven and bake for about 50-60 minutes, or until a toothpick inserted comes out clean.
  2. Let the bread cool in the pan for about 15 minutes before transferring it to a wire rack to cool completely.

Notes

Store the banana bread in an airtight container for up to 3 days or freeze for up to 3 months. Use overripe bananas for best flavor and avoid overmixing after adding flour to keep the bread tender.
