  • 3 pieces ripe bananas Choose bananas with brown spots for best flavor.
  • 1/3 cup melted butter Make sure it isn’t too hot when mixed with eggs.
  • 1 teaspoon baking soda Provides lift to the bread.
  • a pinch salt
  • 3/4 cup sugar Can substitute with brown sugar for deeper flavor.
  • 1 large egg, beaten Use at room temperature for best results.
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour Can be substituted for gluten-free blend.
  • 2 teaspoons ground cinnamon
  • 1/4 cup additional sugar for the swirl

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly.
  2. Mash the ripe bananas in a mixing bowl until smooth, leaving some small lumps for texture.
  3. Stir in the melted butter until combined.
  4. Mix in the baking soda and salt.
  5. Add sugar, the beaten egg, and vanilla extract, mixing until just combined.
  6. Mix in the flour gently until just incorporated.
Cinnamon Swirl
  1. In a separate bowl, mix the cinnamon and additional sugar for the swirl.
  2. Pour half of the batter into the loaf pan, spreading it evenly and sprinkling half of the cinnamon-sugar mixture on top.
  3. Pour the remaining batter into the pan, smoothing it out, and then sprinkle the rest of the cinnamon-sugar mixture on top.
  4. Use a knife to swirl the batter gently.
Baking
  1. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  2. Let it cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

The best way to enjoy this banana bread is warm, plain, or with butter. Store in an airtight container for up to 3 days or freeze for up to 3 months.
