Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan thoroughly.
- Mash the ripe bananas in a mixing bowl until smooth, leaving some small lumps for texture.
- Stir in the melted butter until combined.
- Mix in the baking soda and salt.
- Add sugar, the beaten egg, and vanilla extract, mixing until just combined.
- Mix in the flour gently until just incorporated.
Cinnamon Swirl
- In a separate bowl, mix the cinnamon and additional sugar for the swirl.
- Pour half of the batter into the loaf pan, spreading it evenly and sprinkling half of the cinnamon-sugar mixture on top.
- Pour the remaining batter into the pan, smoothing it out, and then sprinkle the rest of the cinnamon-sugar mixture on top.
- Use a knife to swirl the batter gently.
Baking
- Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
- Let it cool in the pan for about 10 minutes before transferring to a wire rack.
