  • 3 ripe bananas 3 ripe bananas Use very ripe bananas for the best flavor and sweetness.
  • 1/3 cup 1/3 cup melted butter
  • 1 teaspoon 1 teaspoon baking soda
  • Pinch Pinch of salt
  • 3/4 cup 3/4 cup sugar
  • 1 large 1 large egg
  • 1 teaspoon 1 teaspoon vanilla extract
  • 1 1/2 cups 1 1/2 cups all-purpose flour
  • 1 tablespoon 1 tablespoon ground cinnamon Adjust according to taste.
  • 1/4 cup 1/4 cup brown sugar

Method
 

Preparation
  1. Preheat oven to 350°F (175°C). Grease a 4x8-inch loaf pan.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  3. Mix in the baking soda and salt.
  4. Add sugar, egg, and vanilla extract and mix until combined.
  5. Stir in the flour until just incorporated.
  6. In a separate small bowl, mix together the ground cinnamon and brown sugar.
  7. Pour half of the batter into the prepared loaf pan and sprinkle with half of the cinnamon sugar mixture.
  8. Pour the remaining batter on top and sprinkle with the remaining cinnamon sugar.
  9. Use a knife to swirl the batter gently.
Baking
  1. Bake in the preheated oven for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  2. Let cool before slicing.

Notes

Serve warm, plain or spread with butter for extra flavor. Pairs well with coffee or tea. Optionally, add walnuts or chocolate chips for an added twist.
