Ingredients
  

For the Dough
  • 2 cups sourdough starter Make sure it’s bubbly and active for the best result.
  • 4 cups all-purpose flour The backbone of our dough, giving it structure.
  • 1/4 cup sugar A touch of sweetness to balance out the flavors.
  • 1 teaspoon salt Essential in enhancing the other flavors in the dough.
  • 1 teaspoon cinnamon Adds that quintessential warm note.
  • 1/2 cup water Be sure it’s lukewarm for optimal rising.
  • 1/4 cup milk For extra richness; plant-based milk can be used.
  • 1/4 cup unsalted butter, melted Gives that luscious buttery flavor.
For the Filling
  • 1/2 cup brown sugar Sweet, sticky goodness that adds depth.
  • 1 tablespoon cinnamon The star of the filling.
For the Frosting
  • 1/2 cup cream cheese, softened Makes your frosting rich and creamy.
  • 2 cups powdered sugar Sweetens up the frosting.
  • 1 teaspoon vanilla extract Brings everything together.

Method
 

Mix the Dough
  1. In a mixing bowl, combine the sourdough starter, flour, sugar, salt, cinnamon, water, milk, and melted butter. Mix until a soft dough forms, then knead for about 5-10 minutes until silky smooth.
Let It Rise
  1. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for several hours or overnight until it doubles.
Preheat Your Oven
  1. Preheat your oven to 375°F (190°C).
Shape the Dough
  1. Once risen, punch down the dough gently to release air. Spread into a greased baking dish.
Prepare the Filling
  1. Mix brown sugar and cinnamon for the filling. Sprinkle this over the dough.
Roll and Slice
  1. Roll the dough tightly into a log and slice into equal pieces. Place these in the baking dish.
Bake It Up
  1. Bake for about 25-30 minutes until golden brown.
Frost it Right
  1. While baking, blend softened cream cheese, powdered sugar, and vanilla extract until smooth.
Drizzle and Serve
  1. Once baked, let cool slightly and drizzle the frosting over the focaccia. Serve warm.

Notes

For best results, use room temperature ingredients. You can prep the dough the night before and refrigerate. Leftovers can be transformed into French toast.
