Method
Marinate the Steak
- Place the flank steak in a shallow dish or a zip-top bag.
- In a small bowl, mix the oil, lime zest, lime juice, garlic, cilantro, salt, and pepper. Whisk them together.
- Pour this marinade over the steak, making sure to coat both sides well.
- Cover the dish or seal the bag, and put it in the refrigerator to marinate for 30 minutes to 3 hours.
Cook the Steak
- Heat the grill to medium-high. Once hot, place the steak on the grill.
- Grill for 10 minutes, then flip the steak and grill for another 10 minutes or until it is cooked to your desired doneness.
- Remove the steak from the grill and let it rest for 5-10 minutes. Then slice it into thin strips against the grain.
Assemble the Bowls
- Place some rice or riced cauliflower at the bottom of bowls.
- Add the sliced steak, avocado, black beans, corn, cheese, and red onion.
- Drizzle with a lime crema made by mixing sour cream, Tajin seasoning, and lime juice.
Notes
Allow the steak to marinate longer for a deeper flavor. Feel free to add toppings like jalapeƱos, salsa, or fresh lime wedges. The steak can also be cooked in a skillet if grilling isn't preferred.
