Method
- In a large bowl, beat the softened cream cheese and butter until smooth and fluffy.
- Add the egg and vanilla extract. Mix until well incorporated.
- Slowly add the yellow cake mix and stir until combined. The dough will be soft and sticky.
- Chill the dough in the refrigerator for 30 minutes to firm up.
- Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Roll tablespoon-sized portions of dough into balls and coat in powdered sugar.
- Place on prepared baking sheet and bake for 10–12 minutes, until edges are set and centers are soft.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack. Add sprinkles while still warm if desired.
Notes
Store in an airtight container for up to 5 days. Freeze dough balls or baked cookies for up to 3 months. Reheat for a few seconds in the microwave for gooey goodness.
