Christmas Gooey Butter Cookies are soft, sweet, and full of festive charm. Made with cream cheese, butter, and boxed cake mix, these cookies are incredibly easy and perfect for holiday baking. Dusted with powdered sugar and optionally topped with sprinkles, they're a must-have Christmas treat.

Ingredients
  

Wet Ingredients
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 1 egg
  • 1 tsp vanilla extract
Dry Mix
  • 15.25 oz boxed yellow cake mix
Coating
  • 1/2 cup powdered sugar for rolling
  • holiday sprinkles optional, for topping

Method
 

  1. In a large bowl, beat the softened cream cheese and butter until smooth and fluffy.
  2. Add the egg and vanilla extract. Mix until well incorporated.
  3. Slowly add the yellow cake mix and stir until combined. The dough will be soft and sticky.
  4. Chill the dough in the refrigerator for 30 minutes to firm up.
  5. Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.
  6. Roll tablespoon-sized portions of dough into balls and coat in powdered sugar.
  7. Place on prepared baking sheet and bake for 10–12 minutes, until edges are set and centers are soft.
  8. Cool on the baking sheet for a few minutes, then transfer to a wire rack. Add sprinkles while still warm if desired.

Notes

Store in an airtight container for up to 5 days. Freeze dough balls or baked cookies for up to 3 months. Reheat for a few seconds in the microwave for gooey goodness.
