Ingredients
  

Dough Ingredients
  • 4 large Eggs (or egg substitute)
  • 250 ml Milk (or plant-based milk) Slightly warmed
  • 100 g Caster Sugar (or granulated sugar)
  • 50 g Honey (or maple syrup)
  • 500 g Strong Flour (or all-purpose flour)
  • 25 g Fresh Yeast (or instant yeast)
  • 10 g Salt
  • 100 g Butter (melted or dairy-free butter)
  • 50 g Unsalted Butter (or dairy-free butter)
  • 75 g Light Brown Sugar (or brown sugar/coconut sugar)
  • 2 tbsp Christmas Spice Mix (or cinnamon, cloves, and nutmeg)
  • 150 g Dried Cranberries (or raisins/dried cherries)
  • 100 ml Water
  • 100 g Caster Sugar

Method
 

Preparation
  1. Warm the milk slightly and dissolve the yeast in it. Let it sit for about 5 minutes until frothy.
  2. In a large bowl, combine strong flour, caster sugar, and salt.
  3. Add eggs, honey, and melted butter to the dry ingredients. Pour in the milk and yeast mixture. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a lightly greased bowl, cover it with a cloth, and let it rise in a warm place for 1-2 hours or until doubled in size.
Shaping and Baking
  1. Once risen, punch down the dough and roll it out into a rectangle.
  2. Spread unsalted butter evenly on the dough, then sprinkle light brown sugar and Christmas spice mix over it.
  3. Evenly distribute dried cranberries on top.
  4. Roll the rectangle tightly into a log and slice it in half lengthwise to expose the filling.
  5. Twist the two halves together and shape into a spiral or braid. Place in a prepared loaf tin.
  6. Let it rise again for about 30 minutes. Preheat the oven to 180°C (350°F).
  7. Bake for 25-30 minutes or until golden brown.
Finishing Touches
  1. While cooling, mix caster sugar and water to create a simple syrup. Brush it over the warm Babka for a shine.

Notes

Ensure all ingredients are at room temperature for best results. Experiment with different dried fruits or nuts. Let Babka cool completely before slicing for even pieces.
