  • 1/2 cup cashew butter
  • 1/4 cup maple syrup Adjust sweetness to taste
  • 1 teaspoon vanilla extract
  • 1/4 cup chocolate protein powder Can be replaced with vanilla or peanut butter protein powder
  • 2 tablespoons cocoa powder
  • 1/4 cup oat flour
  • 1/4 cup ground flax seed
  • 1/8 teaspoon salt Pinch of salt
Coating Ingredients
  • 1 cup dark chocolate chips Ensure they are dairy-free for a vegan option
  • 1 teaspoon coconut oil
Crunchy Addition
  • 1/2 cup crispy rice cereal

Method
 

Preparation
  1. In a large mixing bowl, whisk together the cashew butter, maple syrup, and vanilla extract.
  2. Stir in the chocolate protein powder, cocoa powder, oat flour, ground flax seed, and salt until everything is well combined.
  3. Divide the mixture into 13 even-sized balls and place them in the freezer for about 5 minutes to firm up.
Coating
  1. In a microwave-safe bowl, combine the dark chocolate chips and coconut oil. Microwave in increments of 30 seconds, stirring in between, until melted.
  2. Mix in the crispy rice cereal.
  3. Use a spoon to coat each protein ball in the chocolate mixture for easy cleanup.
Storage
  1. Store the protein balls in the fridge in an airtight container until set.
