Ingredients

  • 2 1/4 cups all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. In a bowl, whisk together the flour, cocoa powder, baking soda, and salt.
  2. In a large bowl, beat together the softened butter and granulated sugar until the mixture is light and fluffy.
  3. Add the egg and vanilla extract, and mix until everything is combined well.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  5. Divide the dough in half, wrap each half in plastic wrap, and refrigerate for at least 1 hour.
Baking
  1. Preheat the oven to 350°F (175°C).
  2. Roll out the dough on a lightly floured surface to a 1/4 inch thickness.
  3. Use cookie cutters to cut out shapes and place them on baking sheets.
  4. Bake for 8-10 minutes until the cookies are firm.
  5. Allow the cookies to cool before decorating.

Notes

Make sure the butter is softened for easy mixing. Roll out the dough evenly to ensure even baking. Use flour on the rolling pin and surface to prevent sticking. Let the cookies cool completely before decorating to avoid melting icing.
