  • 2 large eggs room temperature preferred
  • 1 cup whole milk room temperature for better mixing
  • 1/2 cup vegetable oil
  • 2 teaspoons vanilla extract
  • 1 cup boiling water

Preparation
  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round baking pans.
  2. In a large bowl, combine the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Use a whisk to blend the dry ingredients together thoroughly.
  3. Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Beat this mixture on medium speed for about 2 minutes until smooth and fluffy.
  4. Carefully stir in the boiling water. Expect a thin batter; this will contribute to the cake’s moist texture.
  5. Pour the batter evenly into the prepared pans and tap them lightly to remove air bubbles.
Baking
  1. Bake in the preheated oven for 30-35 minutes. Check for doneness by inserting a toothpick in the center.
  2. Let the cakes cool in their pans for about 10 minutes, then transfer them to wire racks to cool completely.
