Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas with a fork until smooth and free of lumps.
- Stir in the melted butter until well combined.
- Mix in the baking soda and salt.
- Add the sugar, beaten egg, and vanilla extract; stir vigorously until combined.
- Gradually incorporate the flour until just combined—do not overmix.
- Gently fold in the chocolate chips with a spatula.
- Pour the batter into a greased 4x8 inch loaf pan, smoothing the top.
Baking
- Bake for 60-65 minutes until a toothpick inserted in the center comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack.
Notes
Store cooled bread tightly wrapped in plastic wrap or foil for up to 5 days, or freeze for up to 3 months. Reheat in the microwave in short intervals.
