  • 3 ripe bananas, mashed Use very ripe bananas for best flavor
  • 1/3 cup melted butter
  • 1 teaspoon baking soda
  • 1 pinch salt
  • 3/4 cup sugar
  • 1 large egg, beaten Can substitute with flax egg or applesauce
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour Can substitute half with whole wheat flour
  • 1/2 cup chocolate chips For extra chocolatey flavor, sprinkle more on top before baking

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. Stir in the melted butter.
  4. Mix in the baking soda and salt.
  5. Add the sugar, beaten egg, and vanilla extract, and mix well.
  6. Finally, stir in the flour until just incorporated.
  7. Fold in the chocolate chips.
  8. Pour the batter into a greased loaf pan.
Baking
  1. Bake for 60-65 minutes or until a toothpick inserted into the center comes out clean.
  2. Let it cool before slicing.

Notes

Store wrapped in plastic wrap or aluminum foil at room temperature for 3-4 days, or freeze for up to 3 months. Serve warm or at room temperature, with butter or cream cheese.
