Preparation
- Preheat your oven to 350°F (175°C) and grease a loaf pan.
- In a large mixing bowl, mash the ripe bananas.
- Add the oil and sugar, and mix well.
- Stir in the eggs (if using) and vanilla extract.
- Add the flour, baking soda, and salt, stirring until just combined.
- Fold in the chocolate chips.
- Pour the batter into the prepared loaf pan and smooth the top.
Baking
- Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before slicing and serving.
Notes
To store, place in an airtight container or wrap tightly in plastic wrap for up to 3 days at room temperature. For longer storage, freeze after slicing.
