Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup sugar Can be reduced for a less sweet bread.
Wet Ingredients
  • 4 ripe bananas Use very ripe bananas for best flavor.
  • 1/2 cup oil
  • 2 large eggs Optional for a vegan version.
  • 1 teaspoon vanilla extract Optional
Add-ins
  • 1 cup chocolate chips

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a loaf pan.
  2. In a large mixing bowl, mash the ripe bananas.
  3. Add the oil and sugar, and mix well.
  4. Stir in the eggs (if using) and vanilla extract.
  5. Add the flour, baking soda, and salt, stirring until just combined.
  6. Fold in the chocolate chips.
  7. Pour the batter into the prepared loaf pan and smooth the top.
Baking
  1. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool before slicing and serving.

Notes

To store, place in an airtight container or wrap tightly in plastic wrap for up to 3 days at room temperature. For longer storage, freeze after slicing.
