Ingredients
  

For the Crust
  • 1 cup chocolate cookie crumbs These create a delicious, crunchy crust; use store-bought or crush favorite chocolate cookies.
  • 1/4 cup unsalted butter, melted Helps bind the crust together; ensure it's just melted, not sizzling.
For the Cheesecake Filling
  • 2 cups cream cheese, softened Use room temperature for a silky smooth filling.
  • 1 cup sugar Adjust sweetness if desired.
  • 2 large eggs Bring to room temperature for best results.
  • 1 cup sour cream Adds tanginess to complement sweetness.
  • 1 teaspoon vanilla extract Enhances flavor with a warm aroma.
  • 1 cup cherry pie filling Star topping; fresh cherries can be used if in season.
  • 1/2 cup dark chocolate chips Semi-sweet works beautifully too.

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C) and grease a 9x9 inch baking dish.
  2. In a bowl, combine chocolate cookie crumbs and melted butter; press into the bottom of the baking dish to form the crust.
Making the Cheesecake Filling
  1. In a mixing bowl, beat together softened cream cheese and sugar until smooth.
  2. Add eggs one at a time, mixing well after each addition; scrape down sides for even mixing.
  3. Stir in sour cream and vanilla extract until well combined.
Assembling
  1. Pour half of the cream cheese mixture over the crust.
  2. Spoon cherry pie filling over the cream cheese layer.
  3. Pour the remaining cream cheese mixture over the cherries, and top with dark chocolate chips.
Baking
  1. Bake for 30-35 minutes or until the center is set; let cool, then chill in the refrigerator for at least 4 hours before slicing.

Notes

Use room temperature ingredients for a smoother filling. Line baking dish with parchment for easy removal. Cool bars to room temperature before chilling.
