Ingredients
  

For the shrimp
  • 1 lb shrimp, peeled and deveined Choose large shrimp for best results.
  • 2 tbsp chipotle sauce Adjust the amount based on desired spiciness.
  • Salt to taste
  • Pepper to taste
For the avocado crema
  • 1 whole avocado Choose a ripe avocado.
  • 1/2 cup sour cream
  • 1 tbsp lime juice For seasoning.
For the mango salsa
  • 1 whole mango, diced Fresh mango for the best flavor.
  • 1/4 cup red onion, diced
  • 1/4 cup cilantro, chopped Can be substituted with parsley.
  • 1 whole jalapeño, diced Optional, for extra heat.
  • 1 tbsp lime juice For the salsa.
For assembly
  • 8 pieces corn tortillas Can substitute with flour tortillas.

Method
 

Preparation
  1. Combine shrimp with chipotle sauce in a bowl. Cover and marinate for 15 minutes.
Cooking
  1. Heat a skillet over medium-high heat. Add marinated shrimp and cook for 2-3 minutes on each side until pink and opaque.
Make Avocado Crema
  1. In a blender, blend avocado, sour cream, lime juice, salt, and pepper until smooth. Adjust seasoning to taste.
Prepare Mango Salsa
  1. In a bowl, combine diced mango, red onion, cilantro, jalapeño, and lime juice.
Warm Tortillas
  1. Heat the corn tortillas in a pan or microwave until warm and pliable, about 20-30 seconds in the microwave or 1-2 minutes on the stovetop.
Assembly
  1. Assemble tacos by placing shrimp on each tortilla, drizzling with avocado crema, and topping with mango salsa. Serve immediately.

Notes

Store leftovers in airtight containers. Shrimp lasts 2-3 days, while avocado crema is best consumed within 1-2 days.
