Ingredients
  

For the Chicken
  • 2 pieces chicken breasts Ensure chicken is cooked thoroughly.
  • 1 teaspoon smoked paprika
  • 1 teaspoon cumin
  • 1 teaspoon garlic powder
  • Salt and pepper to taste Salt and pepper to taste
For the Burrito
  • 1 cup cooked rice
  • 1 cup black beans, drained and rinsed
  • 1 cup diced bell peppers
  • 1 cup corn
  • 1/2 cup chipotle ranch dressing Add more for extra heat.
  • 4 large tortillas

Method
 

Preparation
  1. Preheat the grill to medium-high heat.
  2. Season the chicken breasts with smoked paprika, cumin, garlic powder, salt, and pepper.
Cooking
  1. Grill the chicken for about 6-7 minutes per side, or until fully cooked.
  2. Remove from grill and let rest before slicing.
Assembly
  1. In a large tortilla, layer rice, black beans, grilled chicken, diced bell peppers, corn, and drizzle with chipotle ranch dressing.
  2. Roll the tortilla tightly to create a burrito.
  3. Serve immediately and enjoy!

Notes

Wrap leftovers in plastic wrap or aluminum foil and store in the refrigerator for up to 2 days. Consider adding a simple salad or tortilla chips for a meal combo.
