For the Burrito
  • 1 cup cooked rice Brown or white adds a hearty base.
  • 1 cup black beans Drained and rinsed for a tasty texture.
  • 1 piece bell pepper Sliced; any color works.
  • 1 cup corn Sweet corn adds freshness.
  • 1/2 cup chipotle ranch dressing Ties all elements together.
  • 4 large tortillas Whole wheat or flour.

Method
 

Preparation
  1. Fire up the grill to medium-high heat.
  2. Season chicken breasts with smoked paprika, cumin, garlic powder, salt, and pepper.
Cooking
  1. Place seasoned chicken on the grill for about 6-7 minutes on each side, or until fully cooked.
  2. Slice the grilled chicken into tender strips.
Assembly
  1. In a large tortilla, layer rice, black beans, grilled chicken, bell pepper, corn, and drizzle generously with chipotle ranch dressing.
  2. Wrap the tortilla tightly around the fillings, slice it in half, and serve immediately.
