- In a small food processor or blender, puree the chipotle peppers and adobo sauce for about 30 seconds until thick and paste-like.
- Transfer the chipotle mixture to a separate bowl.
- Without cleaning the food processor, add lime juice, mayonnaise, cilantro (if using), fine sea salt, and ground black pepper.
- Gradually add 1 tablespoon of the chipotle mixture at a time, tasting along the way until you reach your desired heat.
- Refrigerate the aioli for at least 30 minutes before serving.
Notes
Store in an airtight container in the refrigerator for up to a week. Can add garlic for more flavor. Adjust heat by using fewer chiles.
