Ingredients
  

For the Aioli
  • 3-6 pieces chipotle chiles in adobo sauce Use fewer for a milder flavor.
  • 2 teaspoons lime juice Add more for a fresher flavor.
  • 1 cup mayonnaise Can be substituted with vegan mayonnaise.
  • 1 tablespoon cilantro, chopped Optional ingredient.
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper

Method
 

Preparation
  1. In a small food processor or blender, puree the chipotle peppers and adobo sauce for about 30 seconds until thick and paste-like.
  2. Transfer the chipotle mixture to a separate bowl.
  3. Without cleaning the food processor, add lime juice, mayonnaise, cilantro (if using), fine sea salt, and ground black pepper.
  4. Gradually add 1 tablespoon of the chipotle mixture at a time, tasting along the way until you reach your desired heat.
  5. Refrigerate the aioli for at least 30 minutes before serving.

Notes

Store in an airtight container in the refrigerator for up to a week. Can add garlic for more flavor. Adjust heat by using fewer chiles.
