Ingredients
  

Main Ingredients
  • 12 oz cream cheese, softened to room temp Make sure your cream cheese is softened for easier mixing.
  • 1/2 cup sour cream
  • 2 cups shredded chicken You can switch out the chicken for shredded beef or turkey if you prefer.
  • 1.5 Tbsp taco seasoning Consider using spicy taco seasoning for a spicier kick.
  • 1 1/2 cups shredded Mexican cheese You can use different cheese blends to change up the flavor.
  • 10 oz can of diced tomatoes with green chiles, drained
  • 1 1/2 tsp garlic, finely minced
  • 5 pcs green onions, sliced thinly
  • 3/4 - 1 cup cilantro, chopped finely Fresh minced cilantro for garnish is optional.
  • 8 pcs burrito sized flour tortillas

Method
 

Preparation
  1. Combine all ingredients in a large mixing bowl, stirring until well combined.
  2. Lay a flour tortilla down on your work surface and spread about 1/4 cup of the mixture evenly over the tortilla, leaving a 1/2 – 1 inch border.
  3. Start at the bottom of the tortilla and roll it up tightly towards the top.
  4. Place the roll seam side down on a prepared pan.
  5. Repeat these steps with the remaining tortillas.
  6. Refrigerate the pinwheels for 30 minutes to several hours to chill and firm up.
  7. Use a sharp, serrated knife to slice each roll into 1-inch pinwheels and serve.

Notes

These pinwheels are great served cold or at room temperature. They pair well with salsa, guacamole, or your favorite dipping sauce. Leftovers can be stored in an airtight container in the refrigerator for about 3 to 4 days.
