Preparation
- In a bowl, combine the chicken breasts with olive oil, chili powder, cumin, salt, and pepper. Ensure the chicken is well-coated. Cover and refrigerate for at least 30 minutes.
Grilling the Chicken
- Preheat your grill or grill pan over medium-high heat.
- Once hot, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, until fully cooked with an internal temperature of 165°F.
- Remove the chicken from the heat and let it rest for 5 minutes, then slice or chop into bite-sized pieces.
Assembling the Tacos
- While the chicken is resting, warm the corn tortillas on the grill or in a dry skillet for about 30 seconds on each side.
- Take a warm tortilla and fill it with grilled chicken, topped with chopped onion and cilantro.
Serving
- Present the tacos on a platter with lime wedges for squeezing over the tacos.
