  • 2 tablespoons olive oil
  • 1 teaspoon chili powder Feel free to adjust the spice levels of the chili powder.
  • 1 teaspoon cumin Feel free to adjust the spice levels of the cumin.

For Assembly
  • 6 pieces corn tortillas Warm and slightly charred.
  • 0.5 cup chopped onion For topping.
  • 0.5 cup chopped cilantro Fresh cilantro adds a fragrant note; parsley can be used as a substitute.
  • Lime wedges For serving.

Preparation
  1. In a bowl, combine the chicken breasts with olive oil, chili powder, cumin, salt, and pepper. Ensure the chicken is well-coated. Cover and refrigerate for at least 30 minutes.
Grilling the Chicken
  1. Preheat your grill or grill pan over medium-high heat.
  2. Once hot, add the marinated chicken breasts. Cook for about 6-7 minutes on each side, until fully cooked with an internal temperature of 165°F.
  3. Remove the chicken from the heat and let it rest for 5 minutes, then slice or chop into bite-sized pieces.
Assembling the Tacos
  1. While the chicken is resting, warm the corn tortillas on the grill or in a dry skillet for about 30 seconds on each side.
  2. Take a warm tortilla and fill it with grilled chicken, topped with chopped onion and cilantro.
Serving
  1. Present the tacos on a platter with lime wedges for squeezing over the tacos.

Notes

For deeper flavor, marinate chicken longer. Avoid overcooking to prevent dryness. Customize with various toppings like jalapeños, mango salsa, or crema.
