Ingredients
  

For the chicken satay
  • 500 grams Chicken thighs Cut into bite-sized pieces
  • 2 Lemongrass Chopped
  • 1 Shallot Minced
  • 1 Chili Chopped (adjust for spice level)
  • 5 tablespoons Soy sauce For marination
  • 3 tablespoons Lime juice Freshly squeezed
  • 2 tablespoons Honey For marination
  • 3 cloves Garlic Minced
  • 8 Skewers Soaked in water for 30 minutes
For the peanut sauce
  • 1 cup Peanut butter Creamy or crunchy based on preference
For the salad
  • 1 cup Cucumber Sliced, for salad
  • 1 cup Vegetables Mixed, for salad (e.g., bell peppers, carrots)

Method
 

Preparation
  1. In a bowl, mix chopped lemongrass, minced shallot, chili, and chicken thighs.
  2. Marinate for at least 30 minutes.
Grilling
  1. Skewer the marinated chicken and grill until cooked through.
Making Peanut Sauce
  1. For the peanut sauce, combine peanut butter, soy sauce, lime juice, honey, and minced garlic.
Serving
  1. Serve the skewers with peanut sauce and a side of Thai cucumber salad.

Notes

Store leftovers in airtight containers in the refrigerator for up to 3 days. Reheat on the grill or in the oven to regain flavor. Adjust chili according to your taste. For smoother peanut sauce, blend ingredients instead of just mixing.
