- In a large skillet, heat the olive oil over medium heat.
- Add the chicken thighs to the skillet and brown them for about 5 minutes on each side.
- Once browned, remove the chicken from the skillet and set it aside.
- In the same skillet, toss in the onion, garlic, and bell pepper. Sauté until they’re soft, around 5-7 minutes.
- Add the diced tomatoes, chicken broth, oregano, salt, and pepper into the veggies. Stir until everything is combined.
- Return the chicken to the skillet, nestling it into the sauce.
- Cover the skillet and let it simmer for about 30-40 minutes.
- Garnish with fresh parsley and serve.
Notes
For extra flavor, marinate the chicken beforehand. Adjust seasoning to your liking. For a thicker sauce, let it simmer uncovered for the last 10 minutes. Chicken Marengo pairs beautifully with pasta, bread, or salad.
