  • 4 pieces chicken thighs Juicy and full of flavor.
  • 2 tablespoons olive oil Helps brown the chicken and adds flavor.
  • 1 cup chicken broth Homemade is best but store-bought works.
  • 1 can diced tomatoes (14 oz) Choose a good quality brand.
  • 1 teaspoon dried oregano Brings Mediterranean vibes.
  • salt and pepper to taste Seasoning is key.
Vegetable Ingredients
  • 1 piece onion, chopped Sweet sautéed onions bring depth.
  • 2 cloves garlic, minced Aroma adds wonderful flavor.
  • 1 piece bell pepper, chopped Adds sweetness and color.

Method
 

Preparation
  1. In a large skillet, heat the olive oil over medium heat.
  2. Add the chicken thighs to the skillet and brown them for about 5 minutes on each side.
  3. Once browned, remove the chicken from the skillet and set it aside.
  4. In the same skillet, toss in the onion, garlic, and bell pepper. Sauté until they’re soft, around 5-7 minutes.
  5. Add the diced tomatoes, chicken broth, oregano, salt, and pepper into the veggies. Stir until everything is combined.
  6. Return the chicken to the skillet, nestling it into the sauce.
  7. Cover the skillet and let it simmer for about 30-40 minutes.
  8. Garnish with fresh parsley and serve.

Notes

For extra flavor, marinate the chicken beforehand. Adjust seasoning to your liking. For a thicker sauce, let it simmer uncovered for the last 10 minutes. Chicken Marengo pairs beautifully with pasta, bread, or salad.
