  • 3-4 pieces boneless, skinless chicken breasts
  • Lo Mein noodles (fresh or dried)
  • 1 piece red bell pepper
  • 1 piece yellow bell pepper
  • 2 pieces carrots (thinly sliced)
  • 2 pieces green onions (chopped)
Sauces and Oils
  • ¼ cup low-sodium soy sauce
  • 1 tablespoon sesame oil
Seasoning
  • 3 cloves fresh minced garlic

Preparation
  1. Gather all ingredients and chop the vegetables into bite-sized pieces.
Cooking Noodles
  1. Cook the Lo Mein noodles according to package instructions until al dente; drain and set aside.
Cooking Chicken
  1. Heat a large skillet or wok over medium-high heat. Add a little oil and sauté the chicken until golden brown and fully cooked, about 6-8 minutes. Remove the chicken from the skillet.
Cooking Vegetables
  1. In the same pan, stir-fry the bell peppers, carrots, and green onions until they are tender yet crisp, about 3-4 minutes.
Combining Ingredients
  1. Return the cooked chicken to the skillet with the vegetables. Add the Lo Mein noodles, soy sauce, sesame oil, minced garlic, and any additional spices. Toss everything together until well mixed.
Serving
  1. Serve hot, with extra soy sauce if desired.

Notes

Make sure not to overcook the vegetables; they should be tender but still have a bit of crunch. You can add or substitute other vegetables like broccoli or snap peas based on what you have on hand. For an extra kick, add some crushed red pepper flakes. For a vegetarian version, replace chicken with tofu or additional vegetables. Use different sauces like teriyaki for a different flavor.
