Ingredients
  

For the Chicken Filling
  • 1.2 lbs chicken boneless Cut into small strips
  • 1 cup mozzarella cheese Or any cheese of your choice
  • 1 tsp salt
  • 1 tsp paprika
  • 2 tsp cumin powder
  • 1 tsp red chili powder Or cayenne pepper
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp oregano
  • 2 tbsp oil
  • 1 tsp minced garlic
  • 2 tbsp butter Melted
  • 1 small onion Thinly sliced
  • 1 bell pepper bell pepper Can use a mix of colors
  • Finely chopped cilantro or parsley For garnish
For the Sliders
  • 12 pieces slider buns

Method
 

Preparation
  1. Cut the chicken into small strips and marinate it with spices and oil.
  2. Thinly slice the bell pepper and onion.
Cooking
  1. In a cast iron skillet, start cooking the chicken.
  2. Once it’s almost cooked, move the chicken to one side of the pan and add the sliced onions and bell peppers. Cook for about 2 minutes, then mix it together.
Baking
  1. Preheat your oven to 350 degrees F.
  2. Cut the sliders in half. On the bottom half of each slider bun, add a layer of the cooked chicken, then add cheese, and cover with the top half.
  3. In a bowl, mix the minced garlic and finely chopped parsley with melted butter. Brush the buns with the garlic butter.
  4. Bake in the preheated oven at 350 degrees F until the cheese melts, about 10-15 minutes.
Serving
  1. Serve Chicken Fajita Sliders warm, straight out of the oven with salsa, guacamole, or sour cream.

Notes

Feel free to customize the spices. Use leftover rotisserie chicken to save time. Other toppings like avocado or jalapeños can be added.
