Main Ingredients
  • 2 cups cooked chicken, shredded Use leftover rotisserie chicken for quicker preparation.
  • 4 cups chow mein noodles Cook according to package instructions.
  • 2 cups mixed vegetables (bell peppers, carrots, broccoli) Feel free to switch up vegetables as desired.
  • 4 pieces green onions, sliced For garnish.
  • 2 cloves garlic, minced
Sauces
  • 1 tablespoon soy sauce
  • 1 tablespoon oyster sauce Can substitute with hoisin or soy sauce.
  • 1 tablespoon hoisin sauce
  • 1 teaspoon sesame oil
  • Salt and pepper to taste

Method
 

Cooking
  1. In a large skillet or wok, heat a little oil over medium heat. Add the garlic and sauté until fragrant.
  2. Add the mixed vegetables and cook until tender.
  3. Stir in the shredded chicken and cook for a few minutes until heated through.
  4. In a separate pot, cook the chow mein noodles according to package instructions. Drain and add to the skillet.
  5. Pour the chow mein sauce (soy sauce, oyster sauce, hoisin sauce, and sesame oil) over the mixture. Toss everything together and cook for another minute.
  6. Season with salt and pepper to taste.
  7. Garnish with sliced green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over medium heat. Add a splash of water or soy sauce if needed to keep moist.
