Ingredients
  

For the Stir-fry
  • 1 lb Chicken breast or thighs, cut into thin strips You can use either breast or thigh meat.
  • 8 oz Chow Mein noodles Cook according to package instructions.
  • 2 cups Bell peppers, carrots, onions, and cabbage Use any preferred combination of vegetables.
  • 3 cloves Garlic, minced Adds flavor.
  • 1 tsp Ginger, minced Adds flavor.
  • 2 tbsp Cooking oil (vegetable or sesame oil) For frying.
  • 2 tbsp Green onions, chopped (for garnish) For serving.
For the Chow Mein Sauce
  • 2 tbsp Soy sauce Base flavor of the sauce.
  • 1 tbsp Oyster sauce Adds depth of flavor.
  • 1 tbsp Sesame oil For a nutty flavor.
  • 1 tbsp Rice vinegar Adds acidity.
  • 1 tbsp Brown sugar Adds sweetness.
  • 1 tbsp Cornstarch Thickens the sauce.
  • 1/4 cup Water Helps to mix the sauce.

Method
 

Preparation
  1. Cut the chicken into thin strips, chop your vegetables, and cook the noodles according to package instructions. Once cooked, drain the noodles and set them aside.
Making the Sauce
  1. In a small bowl, combine soy sauce, oyster sauce, sesame oil, rice vinegar, brown sugar, cornstarch, and water. Whisk until the cornstarch dissolves, then set it aside.
Cooking the Chicken
  1. Heat a wok or large frying pan over medium-high heat and add oil. Add the chicken and stir-fry for about 5-7 minutes until golden brown and cooked through. Remove the chicken from the pan and set it aside.
Stir-frying Vegetables
  1. If needed, add more oil to the pan. Add the garlic, ginger, and chopped vegetables to the pan. Stir-fry for 3-4 minutes until the vegetables are tender-crisp.
Combining Everything
  1. Return the chicken to the pan with the vegetables. Pour the Chow Mein sauce over the chicken and vegetables. Add the cooked noodles and toss everything to coat the noodles evenly in the sauce.
Serving
  1. Garnish with chopped green onions and serve hot.

Notes

You can mix and match your favorite vegetables according to what you have on hand. For an extra touch, sprinkle sesame seeds on top before serving. If you love spice, consider adding some red pepper flakes or sriracha to the sauce.
