A delicious and easy meal combining classic Caesar salad flavors with tender chicken and crunchy vegetables, all wrapped in a soft tortilla.

Ingredients
  

Filling Ingredients
  • 2 cups cooked chicken, chopped Use leftover or rotisserie chicken for convenience.
  • 3 cups chopped romaine lettuce Feel free to use other types of lettuce.
  • 2/3 cup halved cherry tomatoes
  • 1/4 cup freshly grated parmesan cheese
  • 1/2 cup croutons
  • 1/2 cup Caesar salad dressing Serve with extra dressing for dipping.
  • to taste freshly ground black pepper
  • 5 large flour tortillas For a lighter option, use whole wheat tortillas.

Method
 

Preparation
  1. Toss all ingredients, except for tortillas, together in a large mixing bowl.
  2. Place a large spoonful of the mixture in a line along the edge of a tortilla.
  3. Roll up tightly, like a burrito, and secure with toothpicks if necessary.

Notes

Store leftovers tightly wrapped in plastic wrap or in an airtight container in the refrigerator. Best enjoyed within a day or two but can last up to three days. You can add bacon bits, swap chicken for shrimp, or use chickpeas or tofu for a vegetarian option.
