Ingredients
  

Casserole Base
  • 2 cups cooked chicken, shredded Use rotisserie chicken for quicker prep.
  • 2 cups cooked rice Use leftover or pre-cooked rice.
  • 1 can black beans, drained and rinsed
  • 1 can corn, drained
  • 1 cup salsa Use your favorite type.
  • 1 cup shredded cheese Cheddar or Mexican blend works well.
Spices
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • to taste Salt and pepper
Optional Topping
  • Tortilla chips or tortillas Use tortilla chips over the top if desired.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the cooked chicken, rice, black beans, corn, salsa, cumin, chili powder, salt, and pepper.
Layering
  1. In a greased baking dish, layer half of the mixture.
  2. Sprinkle half of the cheese over the top.
  3. Add another layer of the remaining mixture and top with the rest of the cheese.
  4. Crush tortilla chips over the top if desired.
Baking
  1. Bake for 25-30 minutes or until the cheese is bubbly and golden.
Serving
  1. Serve warm from the oven with toppings like sour cream, avocado, or fresh cilantro.

Notes

To store leftovers, let the casserole cool completely, then cover it tightly. Refrigerate for up to 3-4 days or freeze for 2-3 months. Thaw overnight and reheat in the oven.
