  • 1 package (16 oz) gnocchi
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Method
 

Preparation
  1. Heat olive oil in a large pot over medium heat.
  2. Add onion, garlic, carrots, and celery; cook until tender, about 5 minutes.
  3. Stir in shredded chicken, chicken broth, and Italian seasoning; bring to a simmer.
Cooking
  1. Add gnocchi and cook according to package directions.
  2. Reduce heat, stir in heavy cream, and season with salt and pepper.
  3. Add spinach if using, and cook for an additional 2-3 minutes.
  4. Serve hot, topped with Parmesan cheese if desired.

Notes

Use rotisserie chicken for a quick and easy option. Feel free to add more vegetables, like peas or corn, to boost nutrition. Adjust the seasoning to your taste; you can add more Italian seasoning or fresh herbs for extra flavor.
