Preparation
  1. In a large pot, melt butter over medium heat.
  2. Add diced carrots and celery; cook until tender, about 5 minutes.
Cooking
  1. Stir in the chicken broth and bring to a simmer.
  2. Add shredded chicken, thyme, and frozen peas; season with salt and pepper.
  3. Prepare the dumpling mix according to package instructions or make homemade dough.
  4. Drop spoonfuls of dumpling batter into the simmering broth.
  5. Cover the pot and simmer for 15-20 minutes, until the dumplings are fluffy and cooked through.
