Preparation
- In a small saucepan, combine the sugar and water. Bring to a boil and stir for 1-2 minutes until the sugar dissolves completely.
- Remove the saucepan from heat and allow the syrup to cool. You can also refrigerate it while you pit the cherries.
- Pit the cherries and prepare them for blending.
Blending
- In a blender or food processor, combine the cooled sugar syrup, lime juice, cherries, and Amaretto. Blend until the mixture is smooth.
Chilling
- Pour the cherry mixture into the canister of your ice cream maker and follow the manufacturer's instructions.
- For the best texture, pack it into a freezer-safe container and freeze it for several hours or overnight.
Notes
Cherry sorbet can be served plain or garnished with fresh mint leaves or a sprig of basil for added flavor. To store, place in a tightly sealed, freezer-proof container for 1-2 weeks.
