  • 5 to 6 cups fresh pitted cherries (about 2 1/2 to 3 pounds) Make sure to use fresh cherries for the best flavor.
  • 1/2 cup water
  • 2 tablespoons freshly squeezed lemon juice
  • 2/3 cup granulated sugar Adjust based on the sweetness of cherries.
  • 4 tablespoons cornstarch Add more for a thicker filling.
  • 1/4 teaspoon almond extract (optional) Optional for added flavor.

Preparation
  1. In a saucepan over medium heat, combine the cherries, water, lemon juice, sugar, and cornstarch.
  2. Bring the mixture to a boil.
  3. Reduce the heat to low and cook, stirring frequently, for about 5-10 minutes until it thickens.
  4. The filling is ready when the mixture is clear and the cherries have released their juices.
  5. If using almond extract, stir it in and let the filling cool slightly before using.

Notes

Store any leftover filling in an airtight container in the refrigerator for about a week. For longer storage, freeze it after it cools completely.
