- In a saucepan over medium heat, combine the cherries, water, lemon juice, sugar, and cornstarch.
- Bring the mixture to a boil.
- Reduce the heat to low and cook, stirring frequently, for about 5-10 minutes until it thickens.
- The filling is ready when the mixture is clear and the cherries have released their juices.
- If using almond extract, stir it in and let the filling cool slightly before using.
Notes
Store any leftover filling in an airtight container in the refrigerator for about a week. For longer storage, freeze it after it cools completely.
