Ingredients
  

For the Cherry Glaze
  • 2 cups Cherries (fresh or frozen) Pitted and halved if fresh.
  • 1 cup Brown sugar Can substitute with honey.
  • 1/4 cup Balsamic vinegar Adds acidity.
  • 1 teaspoon Cinnamon For flavor depth.
  • 1 teaspoon Cloves Optional spice.
  • 1 tablespoon Butter For melting.
For the Ham
  • 1 whole Bone-in ham (fully cooked) About 8-10 pounds.

Method
 

Preparation
  1. Preheat the oven to 325°F (165°C).
  2. Score the ham in a diamond pattern.
  3. Melt butter in a saucepan over medium heat, then add cherries, brown sugar, balsamic vinegar, and spices.
  4. Simmer the mixture for 15 minutes, allowing flavors to meld.
Cooking
  1. Place the scored ham cut-side down in a roasting pan.
  2. Roast the ham for 15-18 minutes per pound until the internal temperature reaches 130°F (54°C).
  3. Brush a layer of cherry glaze over the ham when it reaches 130°F.
  4. Return the ham to the oven, applying additional glaze every 10 minutes until it reaches 140°F (60°C).
  5. If needed, increase oven temperature to 375°F (190°C) to caramelize the glaze in the final minutes.
Finishing
  1. Let the ham rest for 15 minutes before slicing.

To store, refrigerate any leftovers in an airtight container. Best enjoyed within 3-4 days.
