Preparation
- Preheat the oven to 325°F (165°C).
- Score the ham in a diamond pattern.
- Melt butter in a saucepan over medium heat, then add cherries, brown sugar, balsamic vinegar, and spices.
- Simmer the mixture for 15 minutes, allowing flavors to meld.
Cooking
- Place the scored ham cut-side down in a roasting pan.
- Roast the ham for 15-18 minutes per pound until the internal temperature reaches 130°F (54°C).
- Brush a layer of cherry glaze over the ham when it reaches 130°F.
- Return the ham to the oven, applying additional glaze every 10 minutes until it reaches 140°F (60°C).
- If needed, increase oven temperature to 375°F (190°C) to caramelize the glaze in the final minutes.
Finishing
- Let the ham rest for 15 minutes before slicing.
