Ingredients
  

Main Ingredients
  • 4 cups Grated Zucchini Squeeze out excess moisture
  • 1/2 cup Mozzarella Cheese
  • 1/3 cup Parmesan Cheese
  • 1 large Egg Can be substituted with flaxseed egg for vegan option
  • 1 tsp Garlic Parsley Salt
Topping
  • 1 cup Grated Cheese of Choice Use various cheeses for different flavors

Method
 

Preparation
  1. Preheat the oven to 425°F.
  2. Squeeze all of the juices out of the grated zucchini to help make the breadsticks crispy.
  3. In a bowl, combine grated zucchini, mozzarella cheese, parmesan cheese, egg, and garlic salt. Stir until everything is mixed well.
  4. On a lined baking dish, spread the zucchini mixture in a thin layer, about half an inch thick.
Cooking
  1. Bake the zucchini mixture in the preheated oven for 15 minutes.
  2. After 15 minutes, take it out and add your choice of cheese on top.
  3. Bake for an additional 2-5 minutes until the cheese melts and gets a golden brown color.
  4. Once done, slice the breadsticks and serve them hot.

Notes

Best enjoyed warm. Serve with marinara sauce for dipping. Store leftovers in an airtight container in the fridge for 3-4 days. Reheat at 350°F for about 10 minutes.
