Preparation
- Preheat your oven to 400°F (200°C).
- Wash the baby potatoes and cut them in half or quarters.
- Cut the smoked sausage into 1/4-inch thick rounds.
- In a small bowl, mix the ranch seasoning, garlic powder, onion powder, and black pepper.
- In a large bowl, drizzle the halved potatoes with olive oil and sprinkle with half the ranch seasoning mixture. Toss to coat evenly.
Cooking
- Line a baking sheet with parchment paper or grease it lightly to prevent sticking.
- Place the potatoes in a single layer on the baking sheet.
- Scatter the sliced sausage over the potatoes.
- Roast for 35-40 minutes, stirring halfway, until the potatoes are golden and tender.
- Take out the baking sheet and sprinkle shredded cheese over the top. Bake for an additional 5 minutes, until the cheese melts and bubbles.
- Remove from the oven, garnish with parsley, and serve with sour cream if desired.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or microwave.
