Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes thoroughly, then cut them into halves or quarters.
  3. Slice the smoked sausage into 1/4-inch thick rounds.
Mixing
  1. In a small bowl, mix together the ranch seasoning, garlic powder, onion powder, and black pepper.
  2. Place the halved potatoes into a large bowl. Drizzle with olive oil and sprinkle with half of your ranch seasoning mix. Toss until evenly coated.
Cooking
  1. Line a baking sheet with parchment paper or grease it lightly.
  2. Spread the seasoned potatoes on the baking sheet in a single layer.
  3. Scatter the sliced smoked sausage pieces over the potatoes.
  4. Roast in the oven for 35-40 minutes, stirring halfway through.
  5. Remove from the oven and sprinkle the shredded cheddar cheese over the mixture. Return to the oven for another 5 minutes, or until the cheese is melted.
  6. Garnish with fresh parsley and serve hot, optionally adding a dollop of sour cream.

Notes

Use uniform-sized potatoes to ensure even cooking. Don’t overcrowd the baking sheet for crispy edges. Feel free to experiment with spices or add veggies like bell peppers for extra flavor.
